Wild bradley mushrooms, also called leatherbacks or golden milkies (milkcaps), collected by NC-certified experts at Borrowed Land Farm. This mushroom has a rich, complex flavor that is a great addition to stews, chilis, and sauces. Not generally recommended for sauteing on its own. The bradley exudes "milk" when cut, but it cooks down and contributes to the wonderful rich, nutty flavor. We particularly love to use this mushroom in vegetarian chili and in our slow-cooker spaghetti sauce.
